After getting back from vacation the work week felt extra long. Finally saturday night was there and I could go home and relax. Except Sam was away in New York for the weekend which meant Gunnar and I were free to do whIMG_1409at we wanted. What better way to spend the weekend than at the beach!!! We jumped in the car and went on our way for a little adventure. On our way down I spotted at the grocers and picked up a few essentials for and a surprise for Gunnar.

He has been teething and it really bugging him more the usual. We used to give him babyganics teething gel among other things. However they stopped working a couple of months ago. Now we give him frozen celery or just ice cubes which is loves but I wanted to give him a special treat. There are a few options I could have tried but seeing as how we still have a few magical days of summer left I wanted to stick with that theme. So I decided to make healthier popsicle! It is a pretty simple recipe but quiet a tasty treat. All you need is coconut water and whatever fruit you or your little one likes!

My Ingredients

  • Pineapple Coconut
  • Star fruit
  • Raspberry IMG_1428
  • Little cups
  • Popsicle sticks

If you can find popsicle containers use them. But the above works just as well!!

Pineapple Burger Delight

PINEAPPLE

   Let me start by saying I love pineapple. It is just an amazing fruit. There are so many health benefits in pineapples. It is one of my go to’s for breakfast but it wasn’t until I was pregnant with the little dude that I really understood how great the pineapple was. During the beginning of my pregnancy I would experience severe nausea throughout the day. My main concern was to find a remedy that would satisfy my stomach while giving me peace of mind that my baby wouldn’t be harmed. Through the help of my doctor and a little research on my part I found out that pineapples can actually help with nausea. They are high in Vitamin C and a great anti-inflammatory which I needed.

    Fast forward to the present, I still use pineapples in so many of my recipes. Yes because of that anti inflammatory but also because it is a great way to add in natural sugars to your diet. During the end of my pregnancy I gorged. My third trimester was ending right as Halloween was beginning. Sooo, if you looked on my night stand at any point in the day you would find chocolate bars. Once Gunnar was born I was left with an empty belly and a sugar addiction. I knew I had to do something to fight the cravings while still feeling like I was eating more than just greens. Again my trusty pineapple came in and saved the day! Normally, I make this recipe with veggie burgers but Sam wanted meat tonight.

PINEAPPLE BURGER

WHAT YOU WILL NEED

  • 2LBS Organic Ground beef ( when I don’t have time to go to my local butcher I run to giant and get Nature’s Promise Organic Grass Fed Beef)
  • 1 Large Ripe Pineapple ( to tell if a pineapple is ripe turn it over and smell the bottom if it smells sweet like a pineapple you are good to go. If you are scent challenged like myself you have 2 options. 1.) Squeeze all the pineapples they have till you find a softer one or 2.)they have pre-cut pineapple)
  • 1 Tablespoon Moroccan Seasoning
  • 1 Tablespoon Ancho Chili Pepper
  • 1 tablespoon Chili Powder
  • 1 Tablespoon Ground Cayenne Red Pepper
    Whole Wheat Burger Buns (optional)

EQUIPMENT: You will need a big mixing bowl for meat and spices, a spoon ( if you don’t feel like touching raw meat with your hands) and a sharp kitchen knife.IMG_3025

  • Start by taking your 4 spices mix them in the bowl. Then take your 2 lbs of meat and using a spoon or your hands mix the seasonings and meats together till spices are evenly balanced in the meat
  • Trust me you want to make sure you mix it enough. I got lazy once and ended up being the person with weak burger..not savory.
  • Once mixed you should get 6 medium size patties out of it. Depending on party size 12 mini sliders. Place them on the grill and cook to your own preference!

Now, move on to the PINEAPPLE!!

  • If you are using a whole pineapple you will want to start by cutting the crown off then moving to the bottom of the pineapple and cutting about an inch off the bottom.
  • Then cut the outside skin off of the remaining pineapple. It should end up looking a little like a stop sign.
  • At this point you want to cut it in half and cut out the core of the pineapple.
  • Once you have cut out the core slice the pineapple to your liking!! Put them on the grill for no longer then 5 minutes each side! Below you will see our results. My Fiancé opted for the bun and I went bunless. Either way YUM!IMG_3053
