Pasta Night!

It’s been a long week, filled with doctors appointments, house work, regular work, and ultrasounds! So I felt like tonight I wanted to cook up something a little more manageable while still being wholesome and delicious. I decided to go with pasta, it had been awhile since we had indulged it a little Italian cuisine so I thought tonight was the perfect night for it.

When it comes to pasta if you are like me then it’s hard for you to digest certain brands of pasta. Most of the time I would end up feeling bloated, like I had a bag of rocks resting in my stomach. I started to stay away from it entirely until I was walking through the organic aisle and saw a couple of options. An organic pasta by Bionaturae and a whole wheat pasta, I looked at both and decided to go for the organic pasta it just looked like I would be more satisfied in the end. (aka preggo intuition) So finally I can indulge in the deliciousness again! This meal was totally decided by my preggo cravings so at least two out of four in the family will love it ?

Ingredients

  • Organic Pasta
  • Fettuccine Alfredo
  • 1 clove minced garlic
  • 1 pinch of salt
  • 1 pinch of pepper
  • fresh spinach ( if organic you will want 2 bunches if in a bag one bag will do!)

Start by placing a pot of water on the stove add olive oil and a pinch of pink Himalayan salt and let the water reach a boil. While the water it working its way to a boil sauté the spinach with coconut or olive oil in a large skillet. Add 1 clove of garlic and cover. Causally stir until spinach is a darker shade of green watch for burning! Once the pasta is cooked throughly and placed back into the pot add Alfredo sauce and sautéed spinach, mix together and it let warm up!

Alternative Sauce for non-dairy mamas and family members out there!!!

  • 3 cups organic cauliflower
  • 2 cups almond milk
  • 1 cup organic cashews
  • 1 1/2 cup nutritional yeastIMG_6900
  • 2 cloves organic garlic
  • 1 – 1 1/2 teaspoon pink Himalayan salt
  • 1/4 teaspoon organic turmeric powder
  • 1 – 2 pinch organic cayenne pepper powder

Take all ingredients and mix in a Nutribullet or Vitamix, heat in a pan and pour over cooked pasta!!!
