My New Favorite Go-to
Sometimes all I want is a heavy delicious Italian meal. Most of the time when I catch myself craving I usually go for something extra creamy. But recently I have put an end to all of that and I’m trying to go with something a little healthier. After some practice I’ve finally nailed a spaghetti squash recipe that my family and I can truly enjoy. I know what you are thinking, “Squash, really?!”. Yes I’m serious this recipe has a bit of everything for everyone in your family. Organic chicken sausage, some amazing organic tomato sauce and of course the “noodles”. So, don’t knock it until you try it, and if you still aren’t into it comment below and give me your thoughts on how I can make it better!!!
- Large Spaghetti Squash
- Amy’s organic Tomato Sauce

Start by preheating your oven to 425 degrees, take a large sharp knife out and cut your squash in half (BE VERY CAREFUL). I “saw” it in half at the middle of the squash, some go in from the top and cut it long ways but I tried that once and almost chopped a finger off so, never again! I then scoop out all the seeds and “guts” add a little coconut oil maybe some pepper and stick it in the oven for 35 minutes.
Now I wait to cook the sausage and the sauce till my squash is out and cooling but I get overly excited about making this and most of the time I won’t wait for the squash to cool if everything else is done. So, go put your favorite episode of The Office on and relax for 30!
Okay!! Your squash is done and out of the oven time to start on the sausage! Add a little coconut oil to a pan and let it heat up. While the pan is getting warm slice your sausage however you prefer it. Once the pan is hot you can out your sausage in and let heat up on a medium heat for about 10 minutes (stirring occasionally
For this recipe I used a jar of organic tomato sauce. I do have an AMAZING sauce from scratch recipe but this is a “go-to” for work nights so this working mama is going with the jar! Later when it gets closer to the holiday I will definitely share my secret sauce but for now lets just keep it simple. This Amy’s Organic sauce is one of my favorites it’s not to heavy but has a little kick of flavor! You really don’t need to add much to this sauce so get out a smaller pot and let heat to a boil. Once you get your sauce bubbling turn it down to a simmer and leave it alone until the rest of your meal is ready!!!
