Friday Night Mocktails!

Last weekend or so ago Sam and I ventured out into the cold for a cozy Valentine’s Day date night. And oh boy was it needed!! Finally we could be alone and sit in a restaurant and eat like adults again. Something so normal yet so rare if you’re parents. It was funny while sitting there  enjoying our meal I looked him and he looked at me and we both just looked tired. In that moment we both kind of had the same thought and then he said it, “Next year lets stay in and just relax.” I couldn’t help but agree. Don’t get me wrong we both had so much fun but we were tired; that’s just how it goes. Working full-time and keeping up with house work just had taken the energy out of us, add the weather into the mix and we were done! I mean honestly if Valentine’s Day were in the middle of July we wouldn’t have a problem celebrating but February? Yea we’ve had enough of that! Which is when I started to think about how much I missed spring and summer. With this weather we are having today welp it got my creative juices flowing and I came up with a couple of spring-time mocktails. My motto if I think spring it will be spring so here I am trying to keep the spring like vibe alive!

I feel like if we just keep thinking of sweet spring she will be here faster then we think! Once spring is here you know what that means. Summer is just around the corner and ready to shine.So many things I love about summer, all the BBQs and summer time picnics, trips to the park with Gunnar and Sam and of course sitting out back on a warm summers night drinking wine and just talking with friends.

Now of course I know this year it will be a little different I can still do all of those things its just the last one will need a little tweaking! Instead of drinking wine I will be sipping on sweet tea and summer time MOCKTAILS! So in true Meghan fashion I have already started testing out a couple concoctions to add to my spring/summer arsenal. There are so many I could share with you but for now I’ll be narrowing it down to two! Come spring and summer I have a few delicious ones I’ll be adding into the mix…can you say MOJITO!!! For now I think these lovely spring treats will do just the trick

IMG_7384Citrus Zinger

  • 1 orange
  • 1 lemon
  • 1 lime
  • 5 cups club soda (1 large bottle)
  • 1 cup orange juice

Start by slicing up the orange lemon and lime. Combine 5 cups club soda 1 cup orange juice and toss in all your fruits. Stir and keep refrigerated until ready to serve!

Raspberry Limeade/Lemonade

  • 1 cup organic sugar IMG_7366
  • 1 cup lime juice
  • 5 cups water
  • 1 carton of organic raspberries

Combine sugar and 2 cups of water into a pot and let boil until sugar is melted and mixed in with water. Take off the stove and let is cool.  Once it is cool mix in the 3 other cups of water and 2 cup lime juice. Add freshly washed organic raspberries and keep cool in fridge until ready to serve! Or if you really want to speed up the process run over to the organic aisle in your grocers and grab some lemonade. It will be the perfect ingredient to pack a punch.
