Ensalada de taco Meghana

The other day I was wandering around the grocery store picking out my normal items and checking out a few new ones. I went to grab my favorite black bean burgers when I saw they added a new meatless ground beef product. Of course I had to try it. Finally tonight I got to create a recipe for it aka Ensalada de taco Meghana!!!

Yes this is a meatless recipe but again where I put in the Lightlife Smart Ground Meatless you can use real meat. Let me just say to those of you that are using  the meatless ground in my opinion I would not give this to my son. It has soy in it and there are too many articles going back and forth on the subject of feeding soy to babies that this momma would just like to steer clear for now. I am not saying you can’t I am just saying in our home Gunnar will be sitting this one out.


  • Spinach (or whatever leafy green you prefer)
  • 1/3 cup chopped red onion
  • 1/3 cup chopped tomatillo (Why yes, I do use tomatillo in almost every recipe I make… You caught me?)
  • 1 chopped poblano pepper
  • Baby Tomatoes
  • Half of an avocado
  • Amy’s Vegetarian Organic Refried Beans ( I used traditional but they have a few with more kick if you are into it)
  • Lightlife Smart Ground Meatless

Tonight’s recipe is pretty easy if you are using the meatless option. First you want to put a little oil in the pan then add the tomtillo, onion, and poblano pepper. Let that all cook for a few minutes. Next you want to add the meat or meatless ground to the pan. The only difference between the two options time. For the meatless ground you just have to warm it up (about 4 minutes) so yea it’s pretty awesome. You meat eaters over there need to make sure that ish is BROWN! When it coFullSizeRendermes to cooking ground meat I like to cook it for at least 10-12 minutes on low heat. Then I drain the juices from the pan and cook for another 3-5 minutes (depending on how much meat I am cooking.)

Once the meat is cooking you can start on your refried beans. Get out a smaller pan and put the beans in that and just heat them up. This only takes about 4 minutes at most. When everything is cooked and ready to go switch the burners to low/simmer and start making your salad. I cut up some avocado, added a few tomatoes from the garden and then started by adding my refried beans. I topped all of that off with the meatless ground and of course some more beans. A little splash of cheese and I was good to go. Really you can add whatever you want to it, I mean you are the one eating it so go right ahead. Last but not least as always don’t forget to ENJOY!!!
