End of summer switch up!

IMG_1299Summer is coming to an end so Sam and I are trying to take advantage of what is left of it.  Tonight Sam suggested we grill. He would figure out the main course while I took care of the sides. He then gave me an idea to make a tater tot casserole as a side. At first I just stared at him not knowing how to handle that comment. Then I just walked away. But I thought about it, soon it would be fall and with fall comes some of my favorite savory treats. As a person who sticks with literally all the starches for Thanksgiving I figured it might be a good idea to test out a few alternatives. I decided to start with the tater tots and I turn them into Broccoli Tots!

           Ingredients 

  • 1 head of broccoli chopped (you can use frozen or uncooked)
  • 1 1/2 cup of Cheddar Cheese
  • 1 cup panko bread crumbs
  • 1 cup italian bread crumbs
  • 1 egg
  • 1/3 cup yellow onions

Directions

Preheat oven to 375, mix all the ingredients into a bowl. Form little tots and place on greased baking sheet 1 inch apart. Bake for 10 minutes, take tots out of oven flip then and bake them an extra 7 minutes.

 

WARNING: They are delicious. I ended up not sharing them with anymore….You don’t have to either.
