Cheddar Cauliflower Mash
Recently I’ve found a lot of inspiration from the upcoming holidays. From the mashed potatoes to the stuffing and ham there are so many goodies that I was guilty of indulging this time last year. But this is a new season and a new me! So, for this holiday season I’m going to try and take a few classics and give them a healthy twist. My favorite veggie to work with is cauliflower and while at the store yesterday I found the most beautiful head of orange cauliflower aka “cheddar” cauliflower. Sometimes you can find orange or purple cauliflower instead of your normal white. When you find these jewels don’t be scared they aren’t like this due to dying they have more vitamins in them they regular cauliflower which is why the color is different! Still your same lovable cauliflower but with a little extra kick! This little beauty inspired me and I decided I was going to make a delicious cheesy cauliflower mash!
- 3 tablespoons extra-virgin olive oil
- 1 cup of shredded cheese
- 2 Teaspoons minced garlic
- 1 large head cauliflower, cut into 3/4-inch chunks
- 1 teaspoon coarse salt
- Dash of pepper
- 1/2 a Package of cheddar cheese
- 1/4 cup of milk
- pinch of salt
Heat water and oil in a large pot over medium-high heat. Add cauliflower, and salt. Cover, and cook, stirring occasionally, until tender, about 10 minutes. Mash with a potato masher. Season with pepper. Next take 1/2 package of shredded cheese, salt, and milk into a small pot let this come to a boil and stay at a boil for 2 minutes with a couple of stirs here and there! Pour over mashed cauliflower and stir vigorously until whipped.
