Last weekend or so ago Sam and I ventured out into the cold for a cozy Valentine’s Day date night. And oh boy was it needed!! Finally we could be alone and sit in a restaurant and eat like adults again. Something so normal yet so rare if you’re parents. It was funny while sitting there enjoying our meal I looked him and he looked at me and we both just looked tired. In that moment we both kind of had the same thought and then he said it, “Next year lets stay in and just relax.” I couldn’t help but agree. Don’t get me wrong we both had so much fun but we were tired; that’s just how it goes. Working full-time and keeping up with house work just had taken the energy out of us, add the weather into the mix and we were done! I mean honestly if Valentine’s Day were in the middle of July we wouldn’t have a problem celebrating but February? Yea we’ve had enough of that! Which is when I started to think about how much I missed spring and summer. With this weather we are having today welp it got my creative juices flowing and I came up with a couple of spring-time mocktails. My motto if I think spring it will be spring so here I am trying to keep the spring like vibe alive!
I feel like if we just keep thinking of sweet spring she will be here faster then we think! Once spring is here you know what that means. Summer is just around the corner and ready to shine.So many things I love about summer, all the BBQs and summer time picnics, trips to the park with Gunnar and Sam and of course sitting out back on a warm summers night drinking wine and just talking with friends.
Now of course I know this year it will be a little different I can still do all of those things its just the last one will need a little tweaking! Instead of drinking wine I will be sipping on sweet tea and summer time MOCKTAILS! So in true Meghan fashion I have already started testing out a couple concoctions to add to my spring/summer arsenal. There are so many I could share with you but for now I’ll be narrowing it down to two! Come spring and summer I have a few delicious ones I’ll be adding into the mix…can you say MOJITO!!! For now I think these lovely spring treats will do just the trick
- 1 orange
- 1 lemon
- 1 lime
- 5 cups club soda (1 large bottle)
- 1 cup orange juice
Start by slicing up the orange lemon and lime. Combine 5 cups club soda 1 cup orange juice and toss in all your fruits. Stir and keep refrigerated until ready to serve!
- 1 cup organic sugar
- 1 cup lime juice
- 5 cups water
- 1 carton of organic raspberries
Combine sugar and 2 cups of water into a pot and let boil until sugar is melted and mixed in with water. Take off the stove and let is cool. Once it is cool mix in the 3 other cups of water and 2 cup lime juice. Add freshly washed organic raspberries and keep cool in fridge until ready to serve! Or if you really want to speed up the process run over to the organic aisle in your grocers and grab some lemonade. It will be the perfect ingredient to pack a punch.
When I was pregnant with Gunnar I was so confused with which direction to go in when it came to baby names. I felt so much pressure at first because really the first child in my opinion sets the tone for his or hers siblings names. I wanted something simple but different. And if it was unique enough that he didn’t have any classmates with his name then that was cool too! My name is Meghan I was born in the 80s it wasn’t a top 10 name of anything but it was still high up there. I had like 3 girls in my class with the same name. So I had to constantly deal with the multiple test paper switch ups and group assignment mess ups. This is something I’d prefer to avoid for all of my children.
When it came to baby number two I most definitely started searching for baby names well before I even found out we were pregnant. Honestly, I probably started searching before we even decided to have another. Sam was the one who found Gunnar’s name and we both fell in love with it. So we decided that we would start a little tradition. This time he picked the first name and I would pick the middle name, next time I would be picking the first name. So as you can imagine the pressures on because now it’s MY time! I really wanted to find something meaningful to me. But I also wanted to listen to the baby. I’m a strong believer in names and their meanings. There’s so much power in your own name it’s yours and it gives you confidence. Your name can set a precedent for who you are. Originally I was playing with names like Murphy or Otto for Gunnar but of course a had a few people give opinions and ultimately ended up still being undecided. The second Sam said the name Gunnar that was it, I was sold. My parents not so much but Sam and I, yea it was a done deal! Gunnar was a kicker people told me I was crazy but I could feel moving and bouncing right away. So a name like Gunnar was perfect. ?
That leads me to my favorite baby name website NameBerry. Before Sam found Gunnar’s name I search every naming app or website I could find and I constantly felt like they fell short of what I expected. Then I found Nameberry and I’ve never looked back!! I have used this site for both pregnancies so far and both times I found more than enough names to choose from. It’s the ultimate user-friendly website. It’s so organized with the meaning, origins and percentages of popularity. They also have a section that tells what celebrities even took a liking to each name and what other moms used for middle names. It’s very thorough and clear. Not only are they in-depth with each name but they have so many lists to look through. From winter inspired names to plant inspired names you can pretty much find any type of list you can think of on Nameberry.
It’s really important to always remember that when it comes to baby names as long as you love it that’s all the matters. If people don’t like it well eventually they will and if not then oh well no one asked! If you are dealing with family members who aren’t big fans well just wait it out politely. You don’t want to completely shut down their opinions they are family but at the same time this is your baby. So just be polite and wait it out. By the delivery day no one will be saving anything! At first no one on my side of the family liked the name Gunnar. They envisioned something so different from what Sam and I had in mind. In the end they all love him and his name now, they call him Gunnie Bear and say that there is no better name for him. So at the end of the day it truly is your choice and if you have a feeling about a name just go with it you’ll know it’s right when you find it!
When looking for our second boys name I wasn’t striving for something weird and unusual. I wanted something with meaning and I knew I would find it the second I said it out loud. If I heard the name James and it moved me I would go with it or even something like Indigo or Jagger, it was all up in the air. But the way this little boy came into our lives so casually, so calmly well those name just didn’t seem to fit. I’d been searching and searching with no luck. Then one night sitting on my bed with a bowl of ice cream freshly new to the news I was pregnant I found it. I found the name I’d been searching for. It just felt right, like this was the name to match our newest little adventurer.
That name start with a B that name was Bodhi! Then I read the meaning “Bodhi is synonymous with the state of nirvana, being freed from hate, greed and ego. The Bodhi tree is a large fig tree under which the founder of Buddhism received enlightenment”. That was it all I needed to hear. I fell in love hard for this one so hard that honestly no one was going to be able to change my mind. Not my mom, my husband my best friends or my work friends would be able to change my mind. Whether they liked it or not that was the name Thankfully they all pretty much LOVED it as much as me!

It’s officially as of August 13th or sometime around that date we will be the happy parents to BOYS! That a right we are having another boy and we are so excited! Sam always “knew” it was a boy but I wasn’t so convinced. I just felt like it was a girl I don’t know why but I was sure it was a girl, that is until yesterday. I went for my first ultrasound and sure enough the second the ultrasound tool touched my belly there he was, legs spread eager to let me in on his little secret. And I must say I was a little relieved, of course a happy healthy baby is all I want BUT I already have one boy and I know exactly how to deal with him…well most of the time at least ?. So while every baby is different I will at least be swimming in my normal waters.
Of course after I found out I battled with an announcement. I kept debating with myself, should I go with an announcement or just put up the ultrasound, should I make a big deal or just go low-key? With all the wedding stuff just under my belt I really am feeling a more low-key vibe lately so I wasn’t convinced I was going to even do anything. Then I called my mom to tell her the good news! After we started planning everything from middle names to nursery paint colors she asked if I would be doing an announcement. I told her I wasn’t sure and she put it perfectly. “You have to its fun just have fun with it!” So I did! I went on Pinterest for some idea and I found one I thought so ADORABLE. It also worked out perfectly with Gunnar’s school Valentine’s Day party, I had planned to make treats for the kids since sadly I couldn’t leave work for it. In the end it all worked out and I killed two birds with one stone!
- 1 bag White Chocolate Chips
- 1 pack of Vanilla Cake Batter Oreos
- Pink and Blue food coloring ( I used neon)
Start by emptying your bag of white chocolate chips into a pot. Turn on low or medium heat and constantly check contents stirring frequently till it is melted. Now for this one I only made a few blue Oreos for the reveal and the rest I made for pink for his Valentine’s Party so once the chocolate melted I look about half a cup out and added two drop of neon blue dye while stirring quickly until the color was even. I let the melted chocolate cool for about a minute then I started dipping my Oreos in. Once I was happy with how covered they were I added some sprinkles and left them on a piece of aluminum foil to cool and harden. The only thing I did different with the pink icing was add three drops of neon pink dye instead of two but everything else was the same!!!
